Not only have I been posting a lot of Veggies Don’t Bite recipe links, but I’ve also been making and eating them. With the colder weather, an easy-baked pasta dinner is perfect and you can add in leftover turkey or any protein you want.
Are you ready for some pasta? Check out Baked Vegan Feta Tomato Pasta. For gluten-free pasta options, Dellalo and Jovial are both great for their flavor and texture.
I recommend Trader Joe’s Vegan Feta or Violife’s Just Like Feta for dairy-free options. Both companies have amazing feta-like taste and texture.

are in Joshua Tree National Park in Southern California.
Despite Southern California’s endless severe drought,
the Joshua Tree’s are still surviving, although under threat.
The desert desperately needs water.
Only the rocks are unperturbed.

This is looking tasty!
I loved this version of chicken piccata probably due to the wonderful lemon flake salt. Also, there was no wine and less butter which I didn’t miss; so not as rich. Combined with the salty capers and fresh lemon this recipe was just delightful.

According to Chef Tim Creehan, former executive chef and founding partner of Marina Cafe in Destin, Florida you can make your pasta up to 8 hours before serving. Cook the pasta to package directions, place in cold water or rinse to stop the cooking, drain well. Toss with 1 tbsp. (more or less) canola oil and chill in a freezer bag. This is called resistance starch when pasta is cooked ahead of time, chilled and reheated. The carbs are slower to metabolize which means good things for your blood sugar.

This is the first foodasally.com post, representing a rounded approach to eating and teaching about eating. Food As Ally is about reclaiming our food choices, listening to our hunger and satiety signals, and being supported as we do.
I ate what I wanted, when I wanted, and how much of it I wanted. In doing this today, I discovered that my breakfast smoothie is too filling for me today and that I can wait until I want fruit to eat it. Even if that’s not today. Or tomorrow. If I look at this breakfast from the certified nutrition consultant perspective, there’s nothing wrong with it. I gave myself permission to eat what I wanted and what I wanted tasted good and I’m almost ready to eat again. It kept me full longer than I thought it would.
