A Treat For Fiesta Friday

Black Bean Fudge

Confession time. When Cyhndi told me about this recipe I was cynical. Black beans? In fudge? But I trust Cyhndi so I decided to give it a try. I am also not a fan of fudge because it is loaded with sugar. Hearing that this recipe features black beans and coconut oil knocked the rest of the doubt out. I like black beans now that I have the instant ones. Coconut oil feels good when I use it, and there aren’t that many ways I’ve tried that I like.  I gave it a try.

Ding, ding, ding. this is a winner! Not only is this easy to make, it’s also versatile! I’ve put it in my coffee to make a mocha. You can also melt it to make a chocolate sauce. My favorite is to add coffee powder to it to make mocha fudge.

We love a versatile recipe that we can play with like this. Our next experiment is to powder some TL cherries to make a black forest brownie. I’m already drooling!

Reiki on Animals Workshop: July 9th from 11:00-2:00. Register by July 2nd. Deepen your skills base by learning how often to give a treatment, how long the session should be, how to approach your receiving animal and more. For level II and higher. The fee for the workshop is $60.00.

Combo Workshop: July 16th from 10:00-4:00. Register by July 9th. This combo workshop includes Guided Meditation, Reiki Facial technique and Accepting Abundance. There is one space open. A Thrive Life lunch will be provided. The fee for the workshop is $120.

Scrumptious Saturday Share: July 23rd from 2:30-3:30. Register by July 16th. Bring the family to visit and share about living the Thrive Life. We will be demonstrating and tasting two recipes: Coconut Fruit Salad and Sparking Fruit Water. There is no fee for the share. You will have the opportunity to order Thrive Life ingredients and to taste samples. If you are not in Joshua Tree and would like to attend virtually, we’ll add you to the Skype party. Guided Meditation: July 30th from 11:00-12:30. Register by July 23rd. Meditations are one hour long, with thirty minutes of discussion following the meditation. The fee for each meditation class is $20.

I AM SO PROUD OF HER FIGHT, OUR ZOZO IS WITH THE ANGELS NOW. WE LOST HER AT 6:21AM.

Bottom of the Barrel Pancakes

Ingredients:

Pancake Batter

 

Directions:

  1. Mix all the dry ingredients.
  2. Cut in the Coconut oil (Warmed to soften, but not liquid)
  3. Add the water to mix and oil and stir well.
  4. Pour batter on hot griddle until golden brown.

 

Tropical Fruit Popsicles

Ingredients:

Directions:

  1. In a 4-cavity popsicle mold, divide the fruits evenly in each cavity, breaking if necessary.
  2. Pour coconut water into a large (2 cup or more) measuring cup and add Classic Lemonade Powder.
  3. Stir until powder is dissolved.
  4. Pour coconut water mixture into popsicle molds and let sit for 20-30 minutes for fruit to absorb and sink into mold.
  5. Use a spoon or the popsicle stick to push fruit down into mold if necessary.
  6. Freeze for 4 hours or overnight. Release from mold, using warm water if needed and enjoy!

  1. Combine all ingredients into a small bowl. Cover and refrigerate for 1-2 hours stirring a few times.

 

 

Cilantro Lime Southwestern Salsa

Directions:

  1. Cook and drain beans. Run under cold water until cool and set aside.
  2. While beans are cooking, add water and all other ingredients to a bowl and allow to reconstitute for 15 minutes.
  3. Add beans to vegetable mixture and stir well. Best if allowed to rest in refrigerator for 2 hours before serving.

Past Lives Reading Workshop: June 11th from 11:00-2:00. Register by June 4th. Develop, explore and sharpen your intuition on the subject of past lives. Basic questions to explore are: how many have there been? What are the key parts of each life? How have those lives shaped the one you’re living now? Practice reading for yourself and your classmates. The fee for the workshop is $60.00.

I received a special request from an out of town student to teach the guided meditation workshop, the Reiki Facial workshop and the Accepting Abundance workshop one the same day. We’ll spend two hours on each. Thrive Life snacks and lunch will be provided. The fee for the workshop is $120.00.
